Pesto Fresco Recipe
Ingredients:

- 1 cup fresh mint leaves
- 1 cup fresh spinach leaves
- 1/2 cup cashew nuts
- 2 garlic cloves, peeled
- 1/2 cup grated Parmesan cheese
- Zest of 1 lemon
- 1/2 cup extra virgin olive oil
- Salt to taste

Instructions:
1. Crush garlic cloves in a mortar and pestle or food processor
2. Add cashew nuts and grind into a paste
3. Add mint and spinach leaves, a pinch of salt; grind to a smooth paste
4. Stir in Parmesan cheese and lemon zest
5. Gradually add olive oil, stirring constantly until emulsified
6. Season with salt to taste
7. Serve immediately or store in refrigerator, covered with olive oil
